Ingredients:
2 large zucchini, sliced
freshly shredded parmesan, romano or asiago cheeses
1 egg, lightly beat
garlic salt & pepper, to taste
a sugar free seasoning (italian works best)
Directions:
Preheat oven to 350 degrees. In a small bowl, crack egg. Add all seasonings and lightly beat egg mixture. Slice the zucchini and pat dry (very important). Take the sliced zucchini and dip in egg mixture. Place on cookie sheet (I use parchment paper on mine, but a quick squirt of Pam or some foil would probably do nicely). Then, sprinkle cheese on top of each zucchini. Place cookie sheet in oven and bake for 10-12 minutes. Then turn on broiler and place under broiler for approximately 3-5 minutes until cheese is lightly browned.
These are great all by themselves as a snack or as a side for a meal.

Homemade Italian Dressing (no sugar)
Ingredients:
2 pinches italian seasoning
1 small pinch garlic salt or pepper
1 pinch pepper
optional pinch of dried chili pepper flakes
2 cloves garlic minced, or finely chopped
1/4 c. vegetable, canola or a little less of EVOO
1/2 c. or so (to taste) of apple cider vinegar or white vinegar
Directions:
Combine all ingredients in a bowl with air tight lid. Put lid on and shake to mix before each use. Enjoy best on Salad.

Super Easy Somersize Level 1 Tomato Basil Zucchini Soup

4 cups chicken broth
1 can petite diced tomatoes (make sure no sugar on label)
4-5 cloves garlic, minced
1/3 c. onions, chopped
1 zucchini, diced
fresh basil, maybe 2-3 leaves, chopped
italian seasoning, a pinch or two
a pinch of garlic salt to taste
Shredded Parmesan or Asiago Cheese (opt.)
Directions:
In a saucepan, boil chicken broth. Add garlic, onions, zucchini and cook on medium for about 5 minutes. Add seasonings, tomatoes and fresh basil. Simmer for 10 more minutes while flavors blend and soup becomes a little more reduced. Serve with freshly shredded asiago cheese or parmesan on top. Yum.... Good!!!! and Healthy!

Chicken Cacciatore - Somersize Level 1
Ingredients Needed:
1 lb. chicken breasts (3-4)
1/4 c. olive oil
1/2 c. chicken broth
8 oz. can of tomato sauce (make sure no sugar added!)
3 cloves garlic, minced
1 zucchini, diced bite size pieces
1 sm. onion, chopped
4-5 mushrooms, diced (optional)
1/4 c. or less of red or white wine (red is better)
fresh basil, chopped
garlic salt, s & p, italian seasoning to taste
Directions:
In a large frying pan, put olive oil and chicken in pan and cook on both sides, about 5-7 minutes each side. Take chicken out, cover and put aside. In remaining oil, cook veggies except basil and garlic until soft. Then, add the garlic and basil. Stir and add all the liquids. Let boil for about one minute, then simmer for about 5 minutes. Then add chicken back in, simmer for an additional 5-7 minutes COVERED, occasionally spooning sauce over chicken. Let sit for 5 minutes and enjoy alone... or if on Level 2 serve over whole wheat pasta.
